It's ALL About Berries!

 

It’s berry season. Every year about this time, I get excited about berries. In Georgia, we start getting fat juicy strawberries and blackberries at the stores in mid March. I can’t think many other ingredients that bring more flavor and freshness to our plates than fresh berries! Rock stars for their taste, they also have super powers from a whole cast of antioxidants and vitamins like calcium, magnesium, folate and potassium. Can it get better? YES! Berries are low in calories and high in fiber, too. All wrapped up in sweet easily portable packages.

We often think about berries as dessert – but can go from appetizer to entrée as well. Check out the strawberry salsa recipe below. Or, how about a breakfast salad? Salad isn’t just for dinner – try serving this crunchy, nutty salad for family or friends. They’ll be both surprised and pleased. And you can bask in the admiration of everyone!

 

Light Lemon Yogurt Cake

The Cake:

1 1/2 Cup All-Purpose Flour

2 Tsp Baking Powder

2 Tsp Lemon Zest

1/2 Cup Nonfat Plain Yogurt

1 Cup Sugar

3 Large Eggs

1/2 Cup Canola Oil

 

The Glaze:

1/3 Cup Fresh Lemon Juice

1/4 Cup Powdered Sugar

 

Top with Fresh Berries and Powdered Sugar

 

Step One Preheat the oven to 350F. Spray a 8-inch springform pan with nonstick cooking spray and line the bottom of the pan with a parchment round – coat with nonstick spray.

 

Step Two Place the flour, baking powder, and zest in a bowl, stir to combine.

 

Step Three In a large bowl, combine the yogurt, sugar, and eggs, stirring until well blended. Add the flour mixture to the yogurt mixture, then add the oil and stir to incorporate.

 

Step Four Pour the batter into your prepared pan. Bake for 30-35 minutes, until the cake feels springy to the touch and a toothpick inserted into the center comes out clean. Cool the cake for 15 minutes.

 

Step Five Run a knife around the edge of the pan, and remove it from the pan. With a toothpick poke holes all over the top. Combine the ingredients for the glaze and pour slowly over the cake. Cool completely before serving.

 

Berry Good Breakfast Salad

 

3 Cups Fresh Blackberries

2 Oranges, Peeled and Coarsely Chopped

6 Cups Baby Greens

1 Cup Dried Cranberries or Blueberries

½ Cup Grapenuts, Toasted

½ Cup Walnuts, Toasted and Chopped

OJ Salad Dressing*

 

Arrange the Cherries and oranges on top of the baby greens, which have been spread out on a platter. Sprinkle with the Grapenuts and Walnuts and drizzle with the dressing.

 

*OJ Salad Dressing

3 TB Orange Jam

1 TB Lemon Juice

1/3 Cup Extra Virgin Olive Oil

 

Whisk the ingredients together.

 

 

 

Pork Tenderloin with Strawberry Orange Salsa

(Chicken works great with this recipe, too!)

 

The Tenderloin Marinade:

Zest From 2 Oranges

1 TB Extra Virgin Olive Oil

1 TB Sherry Vinegar

1 Garlic Clove

1 Tsp Sea Salt

1 Tsp Freshly Ground Black Pepper

2 Tsp Dried Oregano

1/2 Cup Chopped Cilantro

 

The Pork:

1 – 2 LB Pork Tenderloin (or Chicken Breasts)
1 TB Olive Oil

 

Step One In a food processor, blend all the Marinade ingredients together. Place the Marinade in a zippy bag, add the Pork and roll to coat the Tenderloin, put in the Frig at least an hour – or overnight.

 

Step Two Remove the Tenderloin from the fridge – pat dry. Heat the oil in a heavy skillet. Add the pork and brown on all sides over medium-high heat.  (About 2-3 minutes each side.) Place in a 350F oven until the internal temperature reaches 145F. (For chicken, the temperature should be 165F) Remove and let rest about 15 minutes before serving.

 

Strawberry Orange Salsa

2 *Oranges, Peeled and Chopped

4 Cups Chopped Strawberries

1/4 Cup Cilantro, Chopped

1 TB Extra Virgin Olive Oil

1 TB Sherry Vinegar

 

Mix the ingredients and serve alongside of the Pork Tenderloin.

 

*Sherry Vinegar is Balsamic’s counterpart from Spain. It has a bright, sweet and sour taste that really makes food sing. It’s no surprise most Sherry Vinegar comes from the city of Jerez, the home of Sherry. Create a salad dressing with equal parts Sherry Vinegar, Orange Juice and Extra Virgin Olive Oil – Delicious!
